Pizza forming machine: full automation for an excellent result
The CLM Bakery System hot pressing system allows you to produce superior quality real Italian pizza as well as the characteristic Neapolitan pizza.
- Dough balls are collected by a brushless motor handler. Special grips transfer the balls accurately onto the conveyor.
- Both the conveyor and the pressing plates are heated with a controlled, heating element system, which keeps the product at the ideal processing temperature at all time.
- The plates are shaped in a way to obtain the desired pizza shape. Changing the outline allows to easily move from flatter pizza to high crust pizza, depending on your production requirements.
- Other brushless motors manage the pressing plates, thus ensuring the highest possible accuracy in terms of pizza base thickness.
- Once pressed, the bases are collected from the conveyors by a second handling system, which is fitted with vacuum picking heads, and laid using a pick and place method on the line conveyor, where toppings will be applied.

- Moreover, during this process the base surface forms a congealed layer, which makes it crispy and prevents the moisture of the topping to soften the base.
