CLM Bakery System automatic fermentation cell is designed specifically to store and maintain dough in its ideal conditions.

  • Constant temperature: the fermentation machine ensures constant temperature for all the necessary time, both for the pre-ferment and the final dough. We provide flexibility in choosing the amount of pre-ferment and the dough rest time.
  • Consistent fermentation: our fermentation trays are small, suitable for 25-40 kg portions, thus enabling consistent fermentation and an effective distribution of gas.
  • Easy washing: our trays are designed with a special drain that allows thorough and simple cleaning. Moreover, the material employed is detectable with a metal detector, thus ensuring food safety.
