Industrial pizza production uses two main methods: the first leverages a die-cutting approach (Sheet&Cut), the second uses lamination (Ball&Pin) and pressing (Ball&Press) processes starting from dough balls.

  • The Sheet&Cut process, though more cost-effective and simpler to manage (including Wash-Down cleaning), compromises final product quality as it reuses leftover material, which builds up with time and causes quality and texture to decrease.
  • The Ball&Pin process starts from small dough balls and ensures a high-quality product thanks to the absence of reused leftover material and the consistency of the processing phase. As such, it ensures a reliably excellent final product.

This is essential to make authentic Neapolitan pizza, which requires sufficient moisture content in the dough through the use of special flour and must be baked at 450° in a wood-fired oven for no more than 60-90 seconds.
